Baked Mushrooms with Cheese

Baked mushrooms with cheese cook evenly when the mushrooms are a similar size, leaving less empty space between the caps. The caps turn soft, the edges brown, and the crumbled cheese nestles between them, while the grated cheese added near the end melts on top; I choose mushrooms of a similar size so they cook at the same pace. Preparation: 15 minutes. Cooking: 25 minutes. Total time: 40 minutes. Serves: 4. Approximately 235 kcal and 14 g protein per serving.
Ingredients
- 500 g mushrooms
- 1 tablespoon olive oil
- 30 ml water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 200 g cheese
- 50 g grated cheese (optional)
Preparation
1. Heat the oven to 200°C. Brush the dirt off the mushrooms, remove the stems and cut them into small cubes. 2. Arrange the caps in a baking dish, hollow side up. Pour 1 tablespoon of olive oil and 30 ml of water over them, if you want to add water to the dish, then sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. 3. Divide 200 g of crumbled cheese among the caps and between them. Bake for 20 minutes, until the mushrooms are browned. 4. Sprinkle with 50 g of grated cheese, optional, and bake for another 5 minutes, until melted.
Notes
Keep refrigerated in a sealed container for up to 3 days; the cheese softens again when reheated. Choose firm mushrooms of a similar size; very large caps may need another 3-5 minutes in the oven. Salty cheese calls for very little salt on the mushrooms, and the cheese and grated cheese contain dairy. I time the baking so it’s ready when we’re about to eat, because once cooled, the cheese is no longer soft. I serve them with slices of toasted bread.
Frequently asked questions
Can I use telemea (Romanian brined cheese) instead of the cheese?
Yes, replace the 200 g of cheese with telemea and crumble it into pieces about 1 cm across.
Why is there so much liquid in the dish?
Mushrooms can release liquid as they bake. If a lot has collected, drain it after 18 minutes and leave the dish in the oven for another 2 minutes before adding the grated cheese.
Can I make the mushrooms in an air fryer?
Yes, cook them in a single layer at 180°C for 10-12 minutes, until browned.
