Polenta with 3 Types of Cheese

To prepare a delicious dish of polenta with bacon and cheeses, we start by boiling water in a large pot. We add a piece of butter the size of a walnut and a pinch of salt, which will help flavor the polenta. When the water starts to boil, we pour the cornmeal in a rain, constantly stirring with a whisk to prevent lumps from forming. We continue to boil the polenta for about 10 minutes, stirring occasionally, until it becomes a thick and homogeneous mixture. After this interval, we take the pot off the heat and let the polenta cool slightly. Meanwhile, we take care of the bacon. In a heated pan, we add the three tablespoons of oil and the bacon cut into small pieces. Frying the bacon will add a savory flavor to our dish. We let the bacon brown until it becomes crispy, after which we remove it from the pan and set it aside, leaving the oil in the pan, as it will contribute to the final taste. In a pot with higher walls or in a dish that can be placed in the oven, we start to assemble the dish. At the bottom of the dish, we place a small portion of fried bacon, followed by a spoonful of lard and a layer of grated mozzarella and grated telemea. Then, we add a thin layer of polenta, smoothing it with the back of a spoon. This will form the base of the dish and provide a pleasant texture. In the indentations made with the back of the spoon, we place a few slices of butter, and over the polenta, we sprinkle pieces of bacon, mozzarella, telemea, and parmesan. We repeat the process, adding another layer of polenta and wishing ourselves to respect the order of the ingredients each time. The last layer of polenta will be covered with mozzarella and a little parmesan to achieve a golden and appetizing crust. After we finish assembling the dish, we cover the pot with a lid and place it in the preheated oven. We leave the dish in the oven for a few minutes, until the cheese on top melts and becomes golden, releasing delicious aromas. It is important to serve this dish hot, to enjoy the combination of textures and flavors. The soft polenta, melted cheeses, and crispy bacon will blend perfectly, creating a comforting and tasty dish, perfect for a family meal or with friends.
