I was thinking of a great carbonara – but also some healthy veggies: That´s what came out- an amazing creation
375 g spaghetti
2 stacks of kale
1/3 cup grated Parmesan cheese
3 egg yolks
100 g bacon
3-4 sundried tomatoes
1/3 cup heavy cream
Salt,pepper, nutmeg to taste
Start off with cutting the bacon, tomatoes and kale in small pieces. In a large pan roast bacon until crispy, add tomatoes.
In large pot of boiling salted water, cook pasta according to package instructions, adding kale during last 2 minutes of cooking. Reserving 1/4 cup of the cooking liquid, drain. Return pasta mixture to pan. Set aside.
Meanwhile whisk together egg yolks, Parmesan, cream;
Now add Pasta to the crispy ham and tomatoe into the pan, stir in the egg mixture until coated. Stir in reserved cooking liquid; cook over low heat, stirring, until sauce is thickened, about 1 minute. Enjoy!
